| Chicken Rice Delight
1 box long-grain and wild rice
2 lrg chicken breasts
1 med onion, chopped
1 cup celery, chopped
½ bell pepper, chopped
2 (4 oz) cans water chestnuts, drained and chopped
2 (11 oz) cans cream of chicken soup
¾ cup mayonnaise
1 cup crushed potato chips or buttered seasoned bread crumbs
Prepare rice according to package. Cook chicken in 2 cups water, seasoned with celery, onion, salt and pepper. Simmer for about 30 to 40 minutes. When done and cooked, chop coarsely and add to rice.
Stir in chopped pepper, onion, celery and water chestnuts.
Blend together soup and mayonnaise and stir into chicken and rice. Pour into buttered 9 x 13-inch dish. Sprinkle with chips or crumbs. Cover and chill overnight. Bake, uncovered 1 hour at 350 degrees. |
