| Coffee Cake #2
½ cup butter or margarine
1 cup sugar
2 eggs
2 cups sifted flour
1 tsp soda
1 tsp baking powder
½ tsp salt
1 cup sour cream
1 tsp vanilla
Cinnamon-Nut Topping:
1/3 cup brown sugar
¼ cup white sugar
1 tsp cinnamon
1 cup finely chopped pecans
Cream butter until soft. Add both sugars and cream until light and fluffy.
Add eggs one at a time, beating well after each addition.
Sift flour, baking powder, soda and salt together. Add dry ingredients alternately with sour cream, beginning and ending with flour mixture. Stir in vanilla.
Pour half of batter into lightly greased 9 x 9-inch baking pan. Cover with half of topping mixture. Pour remaining batter over nut mixture and top with rest of nut mixture. Bake in 325* oven approximately 40 – 45 minutes. |
