| Chicken n’ Rice
1 cup uncooked rice
1 cup green pepper, chopped
1 cup celery, chopped
1/3 cup onion, chopped
2 cups water
6 to 8 pieces of chicken
Salt and pepper
1 (10-1/2 oz.) can cream of mushroom soup
¾ cup hot water
Place rice in bottom of buttered 9 x 13-inch pan. Top with vegetables. Pour water over all.
Place chicken pieces over vegetables. Salt and pepper to taste. Combine soup and water. Pour over the chicken. Bake at 400 degrees for one hour. Serves 6 to 8. |
