| New England Indian Pudding
1 quart milk
5 tbsp cornmeal
2 tbsp butter
1 cup molasses
1 tsp salt
¾ tsp cinnamon
¼ tsp ginger
2 eggs, well beaten
Raisins
1 cup cold milk
Scald milk in a double boiler. Gradually add cornmeal. Cook for 20 minutes. Add remaining ingredients, except cold milk. Blend well.
Pour into a greased casserole dish. Top with cold milk. Bake at 350 degrees for one hour. |
