Rhubarb Delight - Dessert Recipe
Rhubarb Delight 1 cup sifted flour Dash of salt 2 tbsp sugar ½ cup butter 2-1/4 cup rhubarb, finely cut 1-1/4 cup sugar 2 tbsp orange juice 2 tbsp flour 1/3 cup cream or milk 3 egg yolks 3 egg whites ¼ tsp cream of tartar 2 tbsp sugar Sift together 1 cup flour, salt and 2 tbsp sugar. Add butter. Mix well. Place in a 9-inch square pan. Bake at 350 degrees for 20 minutes. In a saucepan, combine rhubarb, 1-1/4 cup sugar, orange juice, remaining flour, cream and egg yolks. Cook over medium heat until mixture thickens, about 10-15 minutes. Pour over crust. Beat egg whites and cream of tartar. Add remaining sugar gradually. Beat until peaks form. Top rhubarb mixture. Bake at 400 degrees till light brown. Cool.
