Easy Chicken Cacciatore
1 large onion 1 tablespoon olive oil 1 pound boneless skinless chicken breast halves 1 package (8 ounces) sliced mushrooms 1 jar (16 ounces) good-quality basil-and-tomato marinara sauce (about 2 cups) 1/4 teaspoon dried red pepper flakes
Coarsely chop the onion. Place oil in a large nonstick skillet over high heat. Add onion and mushrooms and cook, stirring often, for 5 minutes, or until the onion is tender.
Cut the chicken breasts into 1-inch chunks. Push the vegetables aside, add the chicken and cook for 3 to 4 minutes, turning the pieces often, until the chicken is lightly browned.
Add the marinara sauce and pepper flakes, reduce heat to medium and simmer 5 to 6 minutes more or until chicken is cooked through. |
