| Chicken Chop Suey with Fried Noodles
4 pounds chicken
1 tsp salt
1 green pepper, shredded
2 cups onion, shredded
2 Tbsp butter
2 cups celery, shredded
2 cups chicken broth
1 tsp cornstarch
1 Tbsp cold water
2 cups Brazil nuts, sliced
4 Tbsp soy sauce
Put the chicken in a large pot, half full of boiling water, add the salt, partly cover and simmer until nearly tender. Let cool in the broth, drain, and cut the meat into small pieces, discarding the skin.
Cook the green pepper and onion in butter in a heavy skillet for a few minutes, and stir frequently. Add the celery, chicken, Broth, and mixed cornstarch and water, cover and simmer for 5 minutes. Then add the nuts, soy sauce and more salt if necessary. Serve with hot flaky rice. |
