| Healthy Chicken Salad
2 cup cooked, cubed chicken breast
8 oz water chestnut, drained & sliced
1 cup halved seedless grapes
1 cup celery, diagonally sliced
1 cup pineapple tidbits, drained
½ cup toasted almonds, slivered
¾ cup nonfat plain yogurt
¾ cup low-fat mayonnaise
2 tsp soy sauce
2 tsp curry powder
Combine chicken, chestnuts, grapes, celery and pineapple. Blend together yogurt, mayonnaise, curry powder and soy sauce. Gently stir into chicken mixture. Best if covered and chilled overnight but not essential. Before serving, sprinkler with almonds. Serves 8. |
